Chef Hope’s Beef Roast and Gravy

Directions
Roast Beef
1. Mix 45ml oil, garlic and ginger paste, chilli flakes, smoked paprika, orange zest, mixed herbs, salt and pepper in a bowl.
2. Rub mixture over the beef roast and marinade overnight or 3 hours minimum in the fridge.
3. Preheat oven to 220°C. Toss carrots in oil and place at the bottom of a roasting pan. Add beef to roasting pan with carrots on the sides.
4. Roast beef and carrots for 20 minutes. Reduce oven temperature to 160°C. Continue to roast for 40 minutes.
5. Set roast and carrots on a plate and cover with foil to rest for 20 minutes.
Gravy
1. Mix all the ingredients for the gravy in a small pot and pour in roasting pan juices. Bring to a simmer over medium heat for 10 minutes or until thickened.
2. Serve roast beef, carrots and BBQ peach gravy.

Roast beef
- 80ml ( ⅓ cup) oil
- 15ml (1 tbsp.) garlic and ginger paste
- 1 tsp. (5ml) chilli flakes
- ½ tsp. (2.5ml) smoked paprika
- 2 orange/1 lemon zest
- 1 tbsp. (15ml) dried mixed herbs
- Salt and pepper to taste
- 1kg beef roast
- 9 carrots, halved lengthways
- Peaches, roasted
Gravy
- 1 cup (250ml) tomato sauce
- ½ cup (125ml) chicken stock
- ¼ cup (60ml) apple cider vinegar
- ¼ cup (60ml) brown sugar
- 1 tbsp. 15ml BBQ spice
- 1 tbsp (30ml) Worcester Sauce
- ½ tsp. (2.5ml) onion powder
- ½ tsp. (2.5ml) garlic powder
- ½ tsp. (2.5 ml) cayenne pepper
- 3 peaches (nectarines, plums, apricots), chopped
